Giancarlo Cucumo was born in Bari, Italy; a mediterranean region of the country renowned for it’s “lean cuisine” style (vegetables, olive oil, seafood). Bordering the Adriadic Sea, where the water meets the land, Giancarlo grew up in the Kitchen, working with many talented Italian Chefs until he was 14 years old. The ample produce and excellent seafood available in the region gave rise to many of the world’s finest Seafood Chefs and it was under these masters that Giancarlo established his passion for fine foods.
To build his skills, Giancarlo attended the Aldo Perotti Chef Hotels, an Italian culinary school emphasizing study on international cuisine. There he learned much from his professors and the influential recipes found in the Henri-Paul Pellaprat Cook Book. When school would break for summer, Giancarlo traveled to Tuscany to learn Northern Italian cooking styles and recipes.
Giancarlo’s outstanding performance earned him kudos at the institution and the privilege to study as an apprentice under a host of master Chefs in Germany, France, Holland, Australia, and other places throughout Europe. After honing his craft and earning a degree from the prestigious culinary academy, Giancarlo took a bold step toward his dreams of becoming a master Chef, and moved to America.
Giancarlo always wanted to make a place where people can feel like family together; a place where he could free his creative potential and not be confined to corporate politics. Thus, he took his greatest gamble yet, and launched his own restaurant in San Francisco, “Grazie”. Grazie was an instant success and Giancarlo ran the restaurant for years as his reputation grew throughout the Bay Area.

The Brat Stop serves authentic German bratwurst at events all over SLO County. We are set up every Thursday night at San Luis Obispo’s famous Farmers Market and try to make it to as many events and festivals as we can.
Our brats are Thuringer style (from the Thuringia region of Germany) and are made from high quality beef and pork. Aside from their incredible flavor, Thuringer brats are less fatty than most bratwurst.

Jason Ryczek – Executive Chef Having grown up in a little seaside town on the Central Coast of California, Jason is both familiar and fond of all the bounty that local seafood has to offer. As executive chef, Jason oversees the development and execution of Farallon’s seasonally rotating menu. Jason is a veteran to the hospitality and restaurant industries, having held various front and back-of-house positions since junior high. After years of watching the professionalism, humor, and humility of the chefs he worked for, Jason decided to devote his career to the kitchen. Food was the basis of a craft, understanding and interpreting it was the foundation of a restaurant’s menu, and service was the show. His culinary training began in Southern California in Jason Marcus’ San Diego restaurant Red Pearl Kitchen, soon moving to Los Angeles to continue developing his skills at various brasseries and steakhouses, such as One Sunset, Boa Steakhouse, and Artisan House. After arriving in San Francisco in 2013, Jason spent three years in the kitchen of Farallon’s sister restaurant Waterbar, working with fresh, sustainable seafood and developing a culinary style emphasizing the simplicity of natural flavors with bold accents. In January 2016, Jason became the executive chef of Farallon, working with chef and owner Mark Franz to balance the traditional cuisine that Farallon has emerged from, and the contemporary, ever-evolving innovations of the San Francisco food scene.
Giovanni’s Fish Market has been family owned and operated in Morro Bay, California for 30 years. Founded by Mike DeGarimore and since 2004, his son Giovanni has taken over the family business continuing the family tradition of focusing on delivering fresh and local seafood products at the best prices. Sourcing sustainable seafood from the local fleet and unloading it daily across Giovanni’s own docks is the secret to the businesses overwhelming success.
